Passion Fruit Mojito
The Mojito was created at La Bodeguita del Medio, a Cuban bar made famous by its illustrious patrons, foremost among them Ernest Hemingway, who brought the cocktail to worldwide prominence, making it one of the most famous in the world. Alessandro Grasso, bartender at the American Bar of the Diana Grand Hotel, offers a fresh, refined, thirst-quenching, and unique version of the recipe.
Ingredients for 1 person:
4 cl rum
2 teaspoons white cane sugar
3 cl lime juice
1 passion fruit
4-5 mint leaves
3 cl Pontier fresh passion fruit purée
Soda water
Sprig of mint
Method:
Pour the sugar into a glass. Add the lime juice and the contents of half a passion fruit. Add the mint leaves and crush them gently to extract only the mint aroma and not the bitterness. Add the crushed ice, fresh passion fruit purée, rum, and finish with soda water. Mix well from bottom to top with a bar spoon.
Decoration:
Garnish with the other half of the passion fruit and a sprig of mint.
